Hummus Experience 2015 Recipes

WINNER  Challah-Peño Hummus, Y’all! (Honey Jalapeño Lime)

Maddy Duran, Dalia Walzer, and Maya Ramachandran

Ingredients:

Hummus

15 oz can of chickpeas, partially drained
¼ cup tahini
Juice of 1 lemon and 1 lime
1 tsp cumin
1 tsp salt
2-3 jalapenos (depending on how spicy you want it)
4 cloves garlic, skin on
2 Tbsp honey
3 Tbsp olive oil

Roasted Pepitas (optional)

½ cup raw pumpkin seeds
1 Tbsp oil
Pinch each of salt, pepper, cumin

Recipe:

1. Preheat oven to 425 F.

2. Toss jalapenos and garlic (skin on) in olive oil. Roast the jalapenos and garlic for 15-18 minutes

3. After roasting, separate the garlic and jalapenos. Wrap the jalapenos in foil to steam for a few minutes. Then a peel the skin and remove the seeds. Peel the garlic cloves.

4. Put the chickpeas, tahini, lemon and lime juice, salt, cumin, garlic, honey, olive oil in a blender or food processor

5. Blend until creamy and smooth, taste and adjust seasonings

6. For the pumpkin seeds: preheat oven to 350 F. Toss seeds in oil, salt, pepper, and cumin. Spread on a baking sheet and roast for 8-12 minutes.


 

The Israelis

Rotem Hemo and Yoni Stoller

Ingredients:

Salt to taste
Pepper to taste
7 lemons
Coriander
Parsley
a bit of olive oil

Recipe

Mix everything together with a lot of love.


Give it a THAI

Morris Alper and Oron Propp

Ingredients:

3 cups chickpeas
4 tbsp coconut milk
4 tbsp peanut butter
4 tbsp soy sauce
8 tsp lime juice
1 tsp sesame oil
¼ tsp cayenne pepper
2 cloves garlic
4 thumb-sized pieces of ginger
1 smidgen love

Recipe:

Combine and blend to perfection.


Masala Hummus

Inbar Yamin, Elana Ben-Akiva, Noam Buckman

Ingredients:

3 Cans of chickpeas
¾ Cup of Tahini
Juice from 1 lemon
4 teaspoons of curry
2 teaspoons salt
1 teaspoon garam masala
Pinch of turmeric
½ teaspoon cayenne
4 cloves of garlic
2 teaspoons of cumin

Recipe:

1. Blend chickpeas and tahini and lemon juice first until all chickpeas are blended

2. Add the rest of the ingredients and then blend to desired consistency


Yummus

Grant Falkenburg, Gabby Studt, Gurtej Kanwar

Ingredients:

29 oz. chickpeas, drained
2 tbsp. tahini
2 tbsp. sesame oil
½ lemon, juiced
½ orange, juiced
1 avocado
½” ginger, minced
1 tsp. horseradish
3 tsp. sriracha
1 tsp. soy sauce

Recipe:

Blend chickpeas, tahini, and sesame oil in a blender. Add avocado, lemon, and blend until smooth. Transfer to a bowl and mix in remaining ingredients


Limonana Hummus

Stevie Fine, Linda Jing, Shilpa Agrawal, Ambika Krishnamachar

Ingredients:

1/2 cup of lemon juice
40 mint leaves finely chopped
Garlic powder and salt to taste

Recipe:

Prepare the traditional hummus recipe. Stir limonana ingredients into hummus. Enjoy.

Bonus flavor from Team Limonana, Red Hot Maple:

Ingredients: 

1/4 cup of maple syrup
25 drops of tobasco sauce
Sriracha
Salt to taste

Recipe:

Stir ingredients into traditional hummus recipe.
